Adelaide butcher serves up world-first ‘guilt-free’ sustainable beef

In a global first for emissions reduction and ethical eating, Windsor Meats in Malvern is now stocking low-methane, ‘guilt-free’ sustainable beef, thanks to a major partnership with CH4 Global.

The premium wagyu range, already available for purchase, marks the start of a wider rollout to South Australia’s top retailers and restaurants, with Angus beef products at a more affordable price point expected on shelves by October.

Dr Steve Meller, CEO and co-founder of CH4 Global, said: “At CH4 Global, our aim is to foster an ecosystem in which farmers, consumers and retailers can all benefit from access to more sustainable beef.

“Our goal is a win-win-win for everyone. We’re building the entire end-to-end ecosystem in South Australia, from growing the seaweed to producing our finished Methane Tamer product to feed quality Angus cattle and, ultimately, to provide South Australian consumers with high-quality beef that ensures a more sustainable food supply that they can’t get anywhere else in the world.

“In the years to come, we are hoping to see more steaks on plates not just in Australia, but in Southeast Asia, the US, the UK and in South America.”

A local first with global impact

Windsor Meats is the first retail outlet in the world where consumers can experience this innovative, sustainable beef.

The launch follows meetings with acclaimed dining venues such as hatted restaurant Chianti, Barossa Fine Foods, and SkyCity Adelaide – which operates seven eateries at its North Terrace precinct – as well as major supermarket chains.

The initiative is part of CH4 Global’s broader mission to integrate its methane-reducing beef production entirely within South Australia.

From cultivating red seaweed on the Eyre Peninsula to feeding cattle on local farms and supplying the finished beef to retailers, the entire process stays within the state.

Sam Burt, owner of Windsor Meats, added: “Windsor Meats is really excited to be working with CH4 Global and incredibly proud to be the first butcher shop in the world to be able to offer our customers a much more sustainable meat product, particularly at a time when consumers are becoming far more curious about where their food is coming from and about sustainability.

“We love that CH4 Global is a South Australian company that’s supporting local farmers and businesses, and doing something amazing for the environment.”

Seaweed that slashes emissions

At the heart of this breakthrough is Asparagopsis, a red seaweed scientifically proven to cut methane emissions from cows by up to 90% when used as a feed additive.

CH4 Global’s Louth Bay EcoPark currently houses 10 large-scale cultivation ponds, with expansion plans to increase capacity tenfold – enough to serve 45,000 cattle daily.

Methane, a potent greenhouse gas, is a major contributor to global warming, with the livestock sector being a significant source.

By targeting this problem at the source, CH4 Global’s work positions sustainable beef as a tangible climate solution.

International recognition, local commitment

CH4 Global’s achievements have been recognised by global outlets including The New York Times and Time Magazine, and earlier this year, the company was named among CNBC’s Top 50 Global Leaders in Sustainable Development.

Its international partnerships span Mitsubishi in Japan, Chipotle in the US, Lotte in South Korea, and UPL in India.

The company’s deep roots in South Australia are strengthened by support from the state government, with co-founder Dr Steve Meller recently joining Trade and Investment Minister Joe Szakacs on a CEO delegation to the World Expo in Japan.

Szakacs commented: “We have known for some time that the work being undertaken by CH4 Global has the potential to revolutionise the livestock and broader agriculture industry – we are now seeing that being realised.

“The Malinauskas Government is proud of its continued support for CH4 Global – a company that has already had a significant economic and environmental impact across our state.

“Whether you call it ‘better beef’, ‘low methane beef’ or ‘guilt-free beef’, at its core, it’s proudly the result of South Australian ingenuity and innovation, and more importantly, it’s delicious.”

A boost for Brand SA and local buyers

CH4 Global is also a proud member of Brand SA, which promotes South Australian products under its “Buy SA” campaign.

The arrival of sustainable beef in local stores adds a climate-conscious option to the growing list of proudly South Australian goods.

For Adelaide residents, premium wagyu sustainable beef is now on sale at Windsor Meats – offering a chance to support local producers, enjoy world-class flavour, and help reduce agriculture’s environmental footprint.
